Known in Japanese as yomogi, in English as mugwort, fuuchiba is a herb that is much loved in Okinawan cuisine. Fuuchiba cheese was a happy accident.
The intention was to make a Sage Derby, but fresh sage being unavailable, fuuchiba was used. The result was very successful. The gentle marbling looks beautiful and the rustic bitterness of the fuuchiba gives this cheese an individual character.
