Many plants and herbs in Okinawa have medicinal properties. One of these is Sakuna, an Okinawan vegetable – rich in vitamin A, B2, B6, E, β-carotene, and calcium.
Sakuna leaves are dried and powdered and added to the cheese curds to produce Sakuna Cheese. This cheese is a flavoured cheddar, coloured with annatto.
