Yogurt Marinated Chicken/Tofu & Dip

Spicy & filling, perfect for the barbeque.

INGREDIENTS

Chicken breast 200g, cut into cubes
1 block firm Tofu 200g, cut into cubes
2-3 Bell Peppers, cut into squares
1-2 tbs oil for pan frying

Yogurt Marinade
250g The Cheese Guy Yogurt
1 tsp Red Chilli Powder or Paprika
1 tsp Turmeric Powder
1 tsp Cumin Powder
1 tsp Coriander Powder
1 tsp Garam Masala
Salt to taste

Cucumber and mint Yogurt dip
175g of The Cheese Guy yogurt
1/2 cucumber seeded, peeled and finely diced
1 tablespoon of fresh mint chopped
1 tablespoon of mayonnaise
Salt and pepper to taste

Mix in a small bowl, chill for 30mins and enjoy.

METHOD

Beat the yogurt till lump free and mix in all the spice powders listed above along with salt to taste.

Add chicken or tofu cubes along with bell pepper pieces and mix them well till every piece is coated well with marinate.

Cover the bowl and refrigerate. Let the chicken or tofu and bell peppers marinate for at least 30 mins and up to 2-3 hours for all the flavours to blend well.
Once the chicken or tofu and bell peppers are marinated, arrange them on a toothpick or skewers (first two bell pepper pieces, chicken or tofu and another two bell pepper squares) and set them aside.

Heat frying pan and drizzle little oil on it. Arrange chicken or tofu and bell pep- pers on toothpicks or skewers in a single row and let it pan fry for a minute or two till the chicken or tofu turns golden brown.
Gently turn them over to other three uncooked sides and repeat.

Alternatively, you can cook the skewers on the BBQ.
