Kohakuは、当社のスモークチーズです。その名の通り、琥珀色をしています。当社の友人である泡盛酒造メーカーの神村酒造では、自社製品のひとつをウイスキー樽で熟成させています。樽が古くなり、漏れが生じると、その木材を当社に譲ってくれます。それを細かく砕いてチーズを燻製するのに使用します。その結果、ハムやベーコンに似た風味と香りを備えた、まったく新しいタイプのスモークチーズが誕生しました。
そのまま食べたり、チキンやハンバーガーなどにのせて溶かして食べたりします。

Sensational Cheese
Best cheese I've ever had. Getting a large spread before a typhoon, some cured meats, crackers and fruit to go with it; don't forget the wine. The garlic is my favorite, they all are also incredible with sandwhiches. Make sure you buy plenty becausw you'll eat it fast!
It's pretty good for hot sandwiches such as chicken sandwiches and burgers.
After this cheese was delivered, I stored it in the refrigerator for about a month before eating it. I felt that it had a nice, rich flavor that came from aging. I paired this cheese with my favorite Awamori, and it was a great match.
