沖縄では1月中旬に桜が開花します。これは日本で最も早い開花です。私たちは桜の花を手で摘み、洗って乾かし、香りが出るようにプレスして塩漬けにします。これはとても興味深いチーズです。とても簡単に言えば、「桜餅とチーズの出会い」です。間違いなくチーズですが、味は桜もちを思わせます。もちろんお茶との相性も抜群です。お酒と合わせるなら、軽めの日本酒や白ワインが合います ワイン、スパークリングワイン、泡盛などとよく合います。
