Often, when people come into our shop to taste our products, asked about their likes and dislikes, they answer that they like most cheeses, but they don't like blue. Yet, when they taste our Blue Caraway, they love it! Why is this?
Our Blue Caraway is very mild. We only add a small amount of blue culture and do not mature it for long.
Generally speaking, blue cheeses prefer the cold, Danish Blue (Denmark), Stilton (England), Roquefort (France) and Gorgonzola, made in the mountains near Milan. Okinawa's warm climate produces a very mild blue cheese.
We add caraway seeds to give the cheese lighter flavour. Caraway is commonly used in Europe in bread, cakes and liquors and is similar in taste to cumin, aniseed and fennel. The seed itself is slightly sweet and blue cheeses love sweetness.
Blue Caraway is a popular blue cheese with a creamy texture and refreshing caraway after taste.
SERVING SUGGESTIONS
On bread or on a cracker or just by itself. Try using a slice of cucumber in place of a cracker. Add a little honey to bring out the flavour.
In wines, a dessert wine works well, as does a port or sherry. Because nihonshu is slightly sweet, this goes well with Blue Caraway also. Beer and awamori work well too.
