Known in the U.S.A. as "Swiss," and popularly as the "Tom and Jerry" cheese, our Emmental has changed little by little over the years so that it has become something quite different. As such, this is another cheese that's due for renaming.
The holes in the cheese are produced by a special cheese culture that produces CO2 gas as it ferments. The holes are actually bubbles. Originally, the holes were not intentional and were regarded as a defect. But after a while, the holes became popular and became the distinctive feature of the cheese.
This cheese has its own mildly, sweet flavour. It melts very easily, and so is a popular cheese for fondue and is wonderful melted onto grilled meat or vegetables. It goes beautifully with ham in a sandwich.
One day a Swiss customer came into the shop. With great excitement, I told him that we have Emmental. However, his reaction was less than enthusiastic. He apologised and explained that he had never really liked Emmental. But I insisted that he try ours. But as he began to chew, his expression changed. He smiled broadly, "That's a good cheese!" he exclaimed.
And many people have the same opinion. There are several hotels who order whole Emmental cheeses. It pairs well with ham and is a popular item on breakfast menus.
Fondue, melted onto meat or boiled vegetables, sliced in a sandwich. This cheese goes very well with ham or bacon, its slight sweetness suits pork or chicken very well.
