HASSAKU

Japan has many original citrus fruit. One of them is Hassaku. It is a cross between a Japanese mikan and grapefruit and has characteristics of both. Sweet, but slightly bitter and slightly sour.

Similarly to our Shikwasa and Yuzu cheeses, we take the peel, dehydrate it and add it to the cheese before pressing.

Our Hassaku cheese is semi-soft with a very mild citrus flavour. We like to serve it as a dessert cheese with a drop of honey or Jahana Kippan's excellent togan syrup. (Available online or at the shop).
