Ryukyu Crown

This cheese is our original cheese. We wanted to make a 100% Okinawan cheese and so, in place of a starter culture that came from abroad, we used kuro koji, the black yeast that's used to make awamori. This cheese has been marinated in awamori and is very strong. Serve at the end of a meal by itself or on a slice of cucumber.
