Tankan Cheese

A beautifully refreshing cheese, Tankan is semi-soft with a delicate mandarin/orange flavour.

Tankan is an Okinawan citrus fruit popular in the winter months originally from Taiwan. Not beautiful to look at, Tankan is sweet and juicy inside. In taste it could be described as a "full bodied mandarin." We take the peel, dry and powder it, adding it to the cheese curds just before pressing. This is going to be very popular cheese!
