Kippan and Tougan were among the finest sweets served at the Royal Court of the Ryukyu Monarchy — brought from Fujian, China over 300 years ago, and refined over centuries into something uniquely Okinawan. Today, the Jahana family alone continue to make them, using time-honoured recipes passed down through generations. Their toganzuke (candied winter melon) is sweet, crunchy, and extraordinary.

Paired with our own handcrafted Juniper and Fennel Cheese — made with full cream fresh milk from our dairy farm in Nanjo — the contrast is remarkable: smooth and creamy against sweet and crisp, the warmth of fennel and juniper tying it all together.
