Good friends of ours, Jahana Kippan, make an excellent candied melon, "Toganzuke." (taw-gan-zoo-kay). Very sweet and with an enticing crunch. Coupled with a slice of our excellent Juniper and Fennel cheese, this makes a real taste treat. The smooth, creaminess of the cheese contrasts with the sweet crunch of the toganzuke and the fennel and juniper spices bring it all together.
